Raya Away From Home: 5 Easy Cookie Recipes to Try
Hari Raya is without a doubt one of the most awaited celebration in Malaysia, and with that it also welcomes exceptional culinary delights. That said, the recent return to the MCO period has hampered our mood for this wonderful holiday, but we mustn’t let that get in the way of celebrating it. We have with us are a couple of recipes that are both easy and feasible to be done yourself—for a Raya celebration with a taste from home!
Kuih Semperit
Now this has different variations but we’re going for the butter-ish version as it is more known and traditional. Essentially, the kuih semperit is the Malaysian take on butter cookies with an oriental touch to it.
Traditionally designed with a flower pattern, this Malaysian treat is seen in many Malay households and is loved by both kids and adults. And as far as ingredients go, all you really need is a decent mixer that is able to mix and a mold to shape your cookie.
Ingredients include:-
170 g of butter
140 g of caster sugar
1 egg yolk
1 teaspoon of vanilla essence
300 g of plain flour
40 g of custard powder
Instructions
1. Cream butter and sugar until light and fluffy with your mixer. Add egg yolk and vanilla essence.
2. In a separate bowl, combine flour and custard powder. Add ¾ of the flour mixture to the butter mixture to form a soft dough.
3. Fill the dough into a flower semperit maker. Press gently and create dahlia-shaped flower. If dough is too soft, add a little more flour mixture.
4. Bake in preheated oven at 180°C for about 20 minutes or until lightly browned. Continue until all dough is used up.

Thumbprint Cookies
Sometimes when you’re too lazy to make your mum’s famous pineapple tarts but still want to be able to savour some sort of the same flavour, just take the kuih semperit dough recipe and shape them intolittle round balls. Use your thumb (or the handle of a large wooden spoon) to press an indentation into each ball of cookie dough. Spoon 1/2 teaspoon of your favourite jam into the indentation in each one. But for this festive season, use some ready-made pineapple jam!

Cornflake cookies
Again, the cornflake cookies isn’t limited to the Malay household for it is a recurring delight for most races in Southeast Asia—it is so good that this dessert has broken boundaries between cultures and is loved by all.
Ingredients include:-
200g of unsalted butter
2 eggs
150g of sugar
300g of all-purpose flour
60g of cornflakes
1 teaspoon of vanilla essence
30g of corn flour/ cornstarch
Instructions
1. First, cream the sugar and butter properly until it is a creamy white mixture.
2. Stir the white mixture into beaten eggs and vanilla. Add sifted flour.
3. Scoop a teaspoon of the dough and assimilate it in with the cornflakes.
4. After that, bake in oven for 25 minutes at 170 °C or until lightly browned.

German Cookies
With a surprisingly simple ingredient list, these cookies are light and crispy, making it a delight to munch through the celebrations. The secret is to beat the butter and icing sugar at the start until it's really pale and fluffy. Remember not to overbake them in the oven!
Ingredients include:-
125g butter
40g icing sugar (sieved)
125g potato starch
80g superfine flour
Instructions
1. Beat butter and icing sugar till fluffy and lighter in colour.
2. Sift in potato starch and plain flour, mix to form a soft dough.
3. Roll into small balls and arrange on lined baking tray.
4. Dip the tip of the fork in a bowl of water and press on cookie dough.
5. Bake in a preheated oven at 170 deg C for 15 mins.

No-Bake Chocolate Cornflakes
This is for all the beginners in the kitchen. No oven needed here and everyone loves to munch on them while catching up with their loved ones. They are made with only three simple ingredients and can be whipped up in minutes. It’s something that will surely remind you of the good times at home this Raya.
Ingredients include:-
½ cup silvered almonds
2 cups of cornflake
7 oz of chocolate (use dark or semi-sweet if prefer less sweet)
Instructions
1. Melt 3/4 of the chocolate bain-marie style. When chocolate is melted, take off heat and stir in remaining chocolate until completely melted.
2. Stir in almonds and cornflakes. Coat everything and make little heaps into paper cookie cups.
3. Add decorations such as sprinkles if preferred. Put in the fridge to cool for at least 30 mins.
